Last nights dinner was Oven Baked Hake/Haddock Fillet with Tabouleh
Ingredients
For The Fish: Hake/Haddock Fillet x 2, x1 Garlic clove, x1 Bay leave, Salt & Pepper.
For the Tabouleh: 1 cup of Bulgur Wheat, Tomatoes, Parsley, Mint, Olive oil, zest of 1 lemon, Lemon juice and salt.
Method:
Soak 1 cup bulgur wheat and 2 cups boiling water and leave off the heat covered for 15 minutes. Once al dente drain off the water and leave the bulgar wheat in the fridge to cool. (Complete this step first so there is plenty of time to cool)
Rub the Hake Fillet with a little bit of Olive Oil, season with Salt & Pepper.
Slice the garlic clove. Place the sliced garlic and bay leave under the hake fillets in an over proof dish. Bake the fish at 180 degrees celsius until cooked through (approx. 15-20 min).
Chop up the tomatoes, mint & parsley and place it in a salad bowl along with the chilled bulgur wheat.
Mix the lemon zest and juice with 150ml of olive oil and toss through the Tabouleh ingredients add salt to taste.
Plate up and enjoy!
