Healthy Bikini Recipes with MINX

Just this weekend we ate breakfast at the River Café in Constantia followed by wine tasting and then lunch at Steenberg wine farm, it was a great day out but you can’t have too many of these days or that MINX bikini figure will be out the door!
Come Monday after a weekend of overindulgence all we want to eat are simple healthy meals and drink plenty of water!
This gave us an idea – once a week we are going to release a new healthy recipe that we have tried and tested for our MINX readers to try themselves.
Our days are pretty busy so the recipes will always be easy and not full of ingredients no one has ever heard of.

This is what we had for dinner last night:
Pesto chicken breast with a mixed leaf salad for 2.
Ingredients
For The Chicken:
Chicken Breasts X 2, 1 tablespoon Green Pesto, ¼ Cup White wine.
For The Salad:
Pre washed Mixed leafs from the supermarket, Cocktail tomatoes, Mild Chilies OR Peppadew’s, Cucumber, Avocado, Feta,
Olive oil - Salt & Pepper for the dressing.
Method
Rub the chicken breasts in a little bit of olive oil and season with salt and pepper then gently fry.
While the chicken is cooking, chop up all the salad ingredients and put into a salad bowl. Poor a ¼ cup of olive oil into a mixing bowl and season with salt and pepper to taste.
Drizzle the olive oil over the salad and toss to make sure all the leaves have been covered.
When golden brown on both sides remove the chicken breasts from the pan and leave to rest.
Poor the ¼ cup of white wine into the frying pan to deglaze, making sure you get all the chicken off the bottom of the pan. Add the tablespoon of pesto and mix until you have a sticky pesto sauce. At this point, put your chicken breast back in the pan and baste the breast with the sauce.
Plate up your salad and chicken breast and enjoy!
